Description

Easy to make with fresh mint, gorgeous on potatoes­čśŹ

Ingredients

  • 1 big handful mint
  • 1 handful nuts (walnuts are particularly good)
  • 1 big glug rapeseed oil
  • 1 tbsp lime juice
  • 1 clove garlic, peeled
  • salt

Instructions

  1. Chop mint, nuts & garlic in a mini-chopper (or blender on pulse)
  2. Add oil, lime juice & salt
  3. Serve on vegetables or pasta

Notes

Substitute the mint with any other leafy herb – obviously basil works (!) but coriander, parsley, tarragon etc all work really well
