Description

Yes – it’s pink! Sweet & earthy beetroot looks & taste amazing with Thai flavours.

Ingredients

  • 1 medium beetroot, washed & cubed
  • 1 tbsp coconut oil
  • 1/2 tin coconut milk
  • 2 slices ginger
  • 1 clove garlic, cut in half
  • 1 hot red chilli, split lengthways
  • 5 kefir lime leaves
  • 1 large sprig lemongrass
  • salt to taste

Instructions

  1. Fry the beetroot, garlic & ginger in coconut oil
  2. Add the coconut milk & all the other ingredients
  3. Add salt to taste
  4. Serve as a soup or with riceĀ 

Notes

You can grow the lemongrass, kefir lime leaves & red chillis in your Stoots Wall
